I love London broil, but I always end up cooking it the same way. I wanted a different idea that I would love and that my kids would love and I found it. Thai steak salad is so tasty and for some reason I feel like I’m eating healthy when I have it. I like to marinate the meat overnight to give it time to absorb all the luscious flavors.
The meat takes no time at all to cook and the dressing is really easy to make too, plus you use a coleslaw mix that’s already prepared, so there is really nothing to this recipe. You’ll love the taste and if your family is anything like mine, you’ll never have any leftovers to worry about!
Salad:
1 pound London broil, 1 inch thick
2 tablespoons soy sauce
1 tablespoon vegetable oil
1 clove garlic, minced
1/2 teaspoon grated ginger
1 bag (16 ounces) coleslaw mix
1/2 bunch green onions, sliced
1 medium carrot, grated
Dressing:
1/4 cup white vinegar
2 tablespoons sugar
1 tablespoon vegetable oil
3/4 teaspoon grated ginger
1/2 teaspoon salt
