I’ve always wanted to try and make enchiladas at home. I don’t know why, but I seem to steer away from more “exotic” dishes, and enchiladas unfortunately fall outside of my comfort zone. But I need to at least try it.
Here is a way you can make some AWESOME Enchiladas (Angela’s Awesome Enchiladas, to be exact) with items you have on hand. This recipe looks just easy enough that even a novice should be able to do it. Here’s what you need:
2 pounds skinless, boneless chicken breast meat – cut into chunks
1 (10.75 ounce) can condensed cream of chicken soup
1 1/4 cups sour cream
1/4 teaspoon chili powder
1 tablespoon butter
1 small onion, chopped
1 (4 ounce) can chopped green chilies, drained
1 (1.25 ounce) package mild taco seasoning mix
1 bunch green onions, chopped, divided
1 cup water
1 teaspoon lime juice
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
5 (12 inch) flour tortillas
3 cups Cheddar cheese, shredded, divided
1 (10 ounce) can enchilada sauce
1 (6 ounce) can sliced black olives
It starts with chicken that you boil for about 10 minutes; afterwards you shred it up then put it aside. Bring to a simmer the cream of chicken soup, sour cream and chili powder then keep it warm.
Follow directions for the rest of the mixture…then take 1 cup of the soup mixture and with the chicken cook in a skillet. Boy, it sounds so good I can hardly wait the 25 minutes until it’s done. This will be on me list of awesome things to make.
