I was just looking through the latest Rachael Ray Every Day Magazine that I got in the mail – July/August 2016. I was just looking for inspiration for some upcoming dishes I’d like to try out, as I often do.
Well I found a good recipe, and I wanted to share it with you all, but as I searched online, I couldn’t find it for whatever reason. What I found, however, was a Meatless Pizza Capricciosa, a very similar dish from Cheftini Magical Meals in Minutes. She based this pizza off one of Racheal Ray’s pizzas…so in a roundabout way it’s A RACHAEL RAY PIZZA…right!!! Anyway, it looked good, so I figure I’d share it instead.
Here is what you need:
Pizza Dough 1 Lb
Sliced mozzarella cheese (8-10) 1/8″ rounds/squares
San Marzano Tomatoes crushed with hands to a pulp
Sliced Baby Bella mushrooms 8 oz
Sliced leek small (1)
Artichoke quarters 1/4 cup
Splash of Marsala Wine
olive oil
unsalted butter 2 Tblsp.
Sliced black olives 2 Tblsp.
Handful of fresh Basil torn
Salt & Pepper to Taste
You can use pre-made pizza dough from your local pizza shop. You can also put anything on the pizza, my son HATES mushrooms, so I would use olives, pepperoni and LOTS of cheese. Anything you want!!! Just remember to let the dough sit out for 30 minutes.
