It’s Friday night and your kids have things to do and aren’t eating at home. So it will be just you and your husband for dinner tonight. You had taken out chicken for dinner…but you thought that it would give you a chance of making Chicken Honey Nut Stir-Fry, after all dinner is for hubby and me.
Well, your hubby gets home from work at 6:30…its 4:15 which will give me just enough of time to stop at the market. Let see… all you have to get is the boneless skinless chicken breast, celery, cashew and green onions…I have the rest of ingredients.
Speaking of which, here is what you need:
2 tsp. vegetable oil
¼ cup diagonally sliced carrot
¼ cup chopped celery
8 oz. skinless, boneless chicken breast halves, cut into 1 inch pieces
¼ cup orange juice
1 tsp. cornstarch
1 Tbsp. reduced-sodium soy sauce
1 tsp. honey
¼ tsp. grated fresh ginger
2 Tbsp. cashews
2 Tbsp. thinly sliced green onion
2/3 cup hot cooked brown rice
I wasn’t at the market too long so I will have enough of time to make this dish. I cut the chicken…now I’ll do the carrots and celery…everything else is done…now I’ll wait for 6:45.
I made lemonade, set the table. My husband got home at 6:25…I started cooking at 6:40 and we were done eating at 7:20. Just to let you know the chicken dish was definitely a keeper…it was very good and the kids missed out on this dish.
