Who doesn’t love chocolate chip cookies? You KNOW I do! But being a long time baker, there are just some things we seem to take for granted. There’s so many different styles of chocolate chip cookies and most of us just don’t really understand WHY they turn out the way they do. Some are chewy, some are crunchy. Some are hard while others are soft. Most of the time, I end up chalking it up to how long they were in the oven or how much batter I used– basically, a number of factors beyond my control. It never occurred to me tho, that a simple change in ingredients could change a cookie SO RADICALLY! Its all very simple as it turns out, to make the cookie you want to make, with A LOT LESS trial and error than I would have guessed.

It should be noted that, as with all good experiments, the recipe used each time was the exact same base each time, just tweaked slightly to get the desired results.
