Checkout this awesome recipe I found over at the Food Network! Who doesn’t like a little red wine with their meal? But no one ever told me that red wine could BE the meal! This is an experiment that I can’t wait to try! The best part, especially if you don’t like to drinkĀ that much, is that the alcohol should be mostly gone by the time this disk is ready, leaving behind the fantastic wine flavor. I’ve use red wine as a marinade base for meat before with great results, but I never thought of using it for pasta. And that color! Such an interesting dish!
Here is what you’ll need to make Glorious Red Wine Spaghetti:
Kosher salt
1 pound spaghetti
1/4 cup extra-virgin olive oil
3 large cloves garlic, chopped
1 large shallot, halved, thinly sliced into strips
1/2 teaspoon dried crushed red pepper
One 750ml bottle zinfandel
1 tablespoon tomato paste
1 tablespoon butter
1/4 cup fresh flat-leaf parsley leaves, chopped
4 ounces coarsely crumbled goat cheese
